Q

Describe condensation reactions and hydrolysis

A

When a disaccharide is formed, a molecule of water is lost and a new bond is formed. This type of chemical reaction is called a condensation reaction.

When a disaccharide is split into its monosaccharide units, a molecule of water is added and this process is known as hydrolysis.

Q

What’s the percentage of amylose and amylopectin in starch

A

Amylose: 20-30%
Amylopectin: 70-80%

17
Q

Why is amylose a good storage molecule

A

Due to the long unbranched chains of glucose, amylose can be compacted
