Doneness level on meat burgers: Rare, medium rare, medium, medium well, and well done
For Steak and Other Meats
Rare:
Cool, red center.
Very lightly cooked, mostly raw inside.
Internal temperature: ~120–125°F (49–52°C).
Medium Rare:
Warm, red center.
Slightly more cooked while remaining tender and juicy.
Internal temperature: ~130–135°F (54–57°C).
Medium:
Warm, pink center.
Cooked through but still slightly tender.
Internal temperature: ~140–145°F (60–63°C).
Medium Well:
Slightly pink center.
Mostly cooked through with a firmer texture.
Internal temperature: ~150–155°F (66–68°C).
Well Done:
Fully cooked, no pink center.
Firm texture, may be drier.
Internal temperature: ~160°F+ (71°C+).
