What is alpha acid?
it contributes to the bitterness the hops variety can contribute to the beer
When is the bittering flavour from hops incorporated into the beer?
in the boiling process, when AAs are isomerized
What part of hops contributes to aroma?
oil found in the cone
When should you add aroma hops to beer?
at the end of the boil
When should you add hops to boil for flavouring?
mid boil., between isommerizartion and end of boil. typically lower alpha varieties are chosen
What is dry hopping?
when hops are added to fermenter to increase hop aroma in final beer.
What is Malting?
conversion of carbohydrates to dextrin and maltose. usually done with barley. Barley is heated and dried. aim is to isolate enzymes.
What is mashing?
hot Water is added to malt to complete conversion of starch to sugar in mash tun
What is lautering?
pumped into lauter tun, where the wort (sweet liquid) is seperated from grain husks
what is the boil?
wort is boiled in kettle where hops are added
what is wort seperation and cooling?
wort is transferred to whirlpool for seperation of malt and hop particles. then it is cooled
what is fermentation?
yeast is added to convert sugar to alchohol, co2 and flavours
what is maturation
the “green” beer needs to mature in order to allow full dev of flavours and finish
what is the final step?
beer is filtered, carbonated, and transferred to bright beer tank, after a few weeks, beer can be packed
