  1. Sauvignon Blanc: citrus and green fruit aromas. High acidity for sweet wines
  2. Semillon: add body to premium dry white. Thin skin and affinity to noble rot

Entre-Deux-Mers, Graves, Pessac-Leognan

A
  1. Entre-Deux-Mers: between Rivers Dordogne and Garonne can only produce white wines within appellation
  2. Graves and Pessac-Leognan are permitted to produce white wines and reds
  3. Graves and Entre-Deux-Mers: tend to be made from Sauvignon Blanc in an unoaked style
  4. Pessac-Leognan: the whites may be eligible for cru classe status. Tend to be blends of SB and Semillon and be fermented or matured at least partly in new oak giving medium to full body and toasty oak flavors
  5. Medoc and Sauternes produce premium dry whites but sold using generic Bordeaux appellation
