How does viscosity and unsaturation compare ?
viscosity depends on intermolecular forces, hence more viscosity means decreased unsaturated
What technique is used to separate fats and fatty acids ?
Extraction in base.
The functional groups of fat and fatty acid molecules are esters and carboxylic acids, respectively. The best way to separate neutral (ester) and acidic (carboxylic acid) functional groups is by a solvent extraction with basic aqueous solution
What is the electrostatic force in lipophilic media ?
LONDON Dispersion forces.
Since lipophilic means lipid loving, lipids are non polar in motion hence London dispersion forces will hold non polar m molecules together
