Coeliac disease is caused by an immune reaction reaction to gliadins in a persons digestive system . The immune system produces antibodies to bind to gliadin polypeptides which causes inflammation. Some people who stop eating foods that contain gluten still occasionally experience symptoms of coeliac disease.
