Wort

Starting Gravity or Original Gravity
quantity of sugar in the wort before the addition of yeast and the start of fermentation. Scale of Degrees Plato.
Scale of Degrees Plato
1 degree Plato = 1 lbs of sugar in 100 lbs. of solution (~gals. of water); Starting gravity for Landmark Lite - 8.5 degrees Plato, for Scotch Ale - 16.5 degrees Plato.
Finishing Gravity or Final Gravity
Quantity of residual or non-fermentable sugars in the beer at the end of fermentation. Landmark Lite - 1.3 degrees Plato, Scotch Ale - ~4.0 degrees Plato
I.B.U.’s or International Bittering Units
Scale for measuring bittnerness; Gets sent to the lab for this reading. For the most part I.B.U.’s are estimated at the Dane.
Real Ale or Cask-Conditioned Ale
age-old brewing technique originating in the UK. Fermented beer is sent into individual casks - firkins - for secondary fermentation and conditioning. The finished beer is served from the firkin.
