What is so specific with the Beaujolais Crus Mouline-à-Vent, Morgon & Brouilly ? *
Mouline-à-Vent & Morgon are the most powerful and full-bodied, and will improve in the bottle. Brouilly has the largest production.
What is the main difference between Beaujolais AC and Beaujolais Villages AC? *
Gamay has a particular affinity to granite (Beaujolais Villages AC), giving wines of greater character than on the sandy soils further south
Why does Beaujolais Nouveau not age well? *
It is low in sugar, acid, tannin, and alcohol and it doesn’t have the required presence and balance in the three of four above important categories.
Which Food would you pair with Beaujolais Nouveau?
Because of its fruity flavors, soft texture, and decent young acidity, fresh goat cheese, charcuterie. It has the weight to stand up to these cured meats, with a refreshing acidity. Also pair with chicken, gilled meat, lighter pastas, pork, salmon, and veal.
