resistant starch
Beans are a very healthy food, rich in vitamins, minerals, protein, and a form of starch called resistant starch, which is proven to be very beneficial for gut health. I have been involved with research on resistant starch for almost 20 years so dry beans are a food of great interest to me. Beans contain the highest level of resistant starch. Dry beans are also very inexpensive and readily available, especially for people with limited incomes. Dry beans last a very long time because of their low water content; they are not susceptible to attack by bacteria, mold and fungi. Thus, dry beans offer a source of healthy food that is cheap, readily available, and can be stored for years without food safety problems.
phytic acid/phytate
Phytic acid, or phytate, is found in plant seeds. It serves as the main storage form of phosphorus in the seeds.
When seeds sprout, phytate is degraded and the phosphorus released to be used by the young plant.
Phytic acid is also known as inositol hexaphosphate, or IP6.
It’s often used commercially as a preservative due to its antioxidant properties.
why beans are healthy
They are high in fiber, high quality protein, and beneficial low glycemic carbohydrates that can help with cardiovascular health (by lowering unhealthy LDL cholesterol), weight management and blood glucose control.
why phytates are bad
they act as “anti-nutrients” by inhibiting the absorption of beneficial nutrients such as zinc, iron, and calcium.

besides reducing the phytic acid, why else does soaking make beans more nutritious
soaking takes the beans out of their dormant state and makes them germinate!
