2 dashes Peychaud’s Bitters

Coat the inside of a separate, chilled, old fashioned glass with absinthe and pour out any excess. In a mixing glass, muddle the sugar cube with the bitters and add the rye whiskey. Stir and strain into the absinthe coated glass. Traditionally, a lemon peel is squeezed over the drink and then discarded.
Negroni
1 oz Gin
1 oz Sweet Red Vermouth
1 oz Campari
Combine ingredients in an ice filled lowball / old fashioned glass. Stir and garnish with an orange peel.

1.5 oz Scotch
1/2 oz Sweet Vermouth

Fill with Club Soda
Garnish with Orange Slice
Pour over ice into Collins Glass
Mint Julep
2 oz Bourbon Whiskey
4 Mint Sprigs
1 tsp Sugar or 1/2 oz Simple Syrup
Muddle the mint and sugar in the bottom of a highball glass. Fill the glass with crushed ice. Add the bourbon and stir well. Garnish with a mint sprig.
French 75
1 oz Gin ½ oz Simple Syrup ½ oz Lemon Juice Champagne Garnish with Lemon Twist
Combine the gin, simple syrup and lemon juice with ice in a shaker. Shake well and strain into a chilled champagne flute glass. Top up with champagne.
Zombie
1 oz White Rum 1 oz Gold Rum 1 oz Dark Rum 1 oz Apricot Brandy ½ oz high proof Rum (Barcardi 151) 1 oz Pineapple Juice 1 oz Papaya Juice Dash of Grenadine
Combine all ingredients (except the high proof rum) in a shaker with ice. Shake and strain into a hurricane or highball glass. Lastly, add the high proof rum. Garnish with a pineapple slice or orange and a cherry.
Pisco Sour
2 oz Pisco 1 1/3 oz Lemon Juice 2/3 oz Simple Syrup 1 Egg White Dash of Bitters
Combine all ingredients (except the bitters) in a shaker with ice. Shake hard and strain into a lowball / old fashioned glass. Lastly, add the bitters.
Mojito
1 1/3 oz White Rum 1 oz fresh Lime Juice 3 sprigs of Mint 2 tsp Sugar Soda Water
Muddle the mint, sugar and lime juice in a highball glass. Fill the glass with cracked ice. Add the rum and then top up with soda water. Garnish with a sprig of mint and a lemon slice.
Singapore Sling
1 oz Gin ½ oz Cherry Liqueur ¼ oz Cointreau ¼ oz Bénédictine 4 oz Pineapple Juice ½ oz Lime juice 1/3 oz Grenadine Dash of Angostura Bitters
Combine ingredients with ice in a shaker. Shake well and strain into a hurricane glass. Garnish with a pineapple slice and a maraschino cherry.
El Presidente
1½ oz Rum
½ oz Orange Curaçao
¾ oz Dry Vermouth
Dash of Grenadine
Combine ingredients with ice in a mixing glass. Stir and strain into a cocktail glass. Garnish with an orange peel.
Caipirinha
2 oz Cachaça
1 Fresh Lime cut into 8 wedges
2 tsp Sugar
Muddle the lime wedges and sugar in a lowball / old fashioned glass. Fill the glass with crushed ice and then add the Cachaça.
Caipiroska
2 oz Vodka
1 Fresh Lime cut into 8 wedges
2 tsp Raw (or Muscovado/Turbinado) Sugar
Muddle the lime and sugar in an old fashioned glass. Fill the glass with crushed ice and then add the vodka.
Bourbon Fizz
2 oz Bourbon 1 oz Lemon Juice 1 Tablespoon Superfine Sugar 1/2 oz Egg White Liquid (or 1 Egg White) 1.5 oz Club Soda Aromatic Element (Mint, Basil etc)

2 oz Liquor 1 oz Lemon Juice 3/4 oz Simple Syrup 1/2 oz Liquid Egg White (or 1 egg white) Aromatic Element (optional) *Mix above ingredients in metal tumbler

-Add 1 oz Soda Watee
