Q

Explain what extrusion porosification technology is and who is developing it

A

CSIRO working with French company which is producing this new spray drying technology
uses lower temps which use less energy than reg spray drying = causes less damage to foods flavour and nutritional composition

17
Q

Discuss the new juices created by high-pressure pasteurisation

A
  • each bottle loaded into cold pressure processing machine which is filled with water.
  • machine switched on creating hyperbaric pressure
  • Extreme pressure kills micro-organisms that spoil juice.
