What to not do when fire occurs in the kitchen?
Pour water on the fire (will cause it to spread)
How to put out a fire without the use of a fire blanket and extinguisher?
Cover using a large saucepan lid or pour flour/sand onto it
Where should fire blanket be?
Attached to the kitchen wall at waist height.
How to use a fire blanket?
1) pull down on the tabs to remove it from the cover
2) gently place it on the fire (no throwing) and off the heat source
3) leave it there till fire dies and equipment has been cooled
What to do when fire gets on clothing?
Wrap the blanket around the person’s clothing and the person will roll around on the ground to put out the fire.
Can u use the fire blanket twice?
NEVER. USE IT ONCE AND ONCE ONLY.
Examples for kitchen hygiene
1) Use clean tea towels to dry dishes
2) Dishcloths must be replace regularly / soak or sanitised if it is reusable
3) Keep food preparation clean and tidy while working.
4) Sanitise work bench thoroughly.
What to not do with tea towels?
Wipe spills, flung over shoulder while cooking or drying hands
When to wash hands?
Before food preparation, after toilet, after blowing nose.
How does cross-contamination occur?
When bacteria from uncooked food are transferred to already cooked/prepared food.
Hot and cold food must be kept at which temperature?
Hot- Above 60 degrees
Cold- Below 5 degrees
Where is the danger zone?
Between 5°C and 60°C
Does food and poisoned food taste the same?
Poisoned food look, smell & taste the same.
How to avoid food poisoning
- Separate raw and cooked food
- Cover all food using lids, foil or plastic wrap.
- Avoid storing food in tin cans
Temperature when cooking food
at least 75°C
