1) Produced in the U.S. and its territories
2)Made of at least 51% Corn
3)Aged in new, charred American oak barrels
4)Distilled to no more than 160 proof (or 80% alcohol)
5)Into barrel at no more than 125 proof
6) bottled at 80 proof or more
What is Malt?
Any cereal grain that has begun to germinate.
What is a Sour Mash?
The process when previous fermentation has been added to a new batch as a starter.
What is Peat?
a type of soil that is burned and used as fuel when making malt and the smoke infuses the grain that is being malted
