What is the dining room made of?

A

One of the largest buildings ‘in the village’, is barn-like, featuring walls of stacked handmade oak planks.

It’s construction used 46 cubic meters of oak and over 250, 000 screws.

The floor is also solid oak, created by Danish company, Dinesen, using 200 year old HeartOak. Naturally, wood this old is prone to cracking, so they crafted beautiful oak bows over the cracks to feature the uniqueness of the materials.

What materials are the Service Kitchen made of and by who?

A

The service kitchen is open and situated in centre of the restaurant, sharing the energy of the kitchen with the guests and front of house team.

Stainless steel surfaces, that are clad in oak are designed by David Thulstrup and manufactured Belgian company, Maes Inox. All the inductions by BEN MARTIN are also manufactured by Maes Inox.

The Private Dining room is made entirely, floor to ceiling, of Dinesen Douglas Fir, and the credenza is a bespoke design by David Thulstrup and constructed by Malte Gormsen.
