Hamachi Aquachile
2.5oz of Hamachi (Yellow Tail) served with avocado, red onion, pickled fresno chili and shiso leaves. Finished with a mango calamansi aji amarillo sauce, lava salt, fried chickpeas, and micro flowers. Allergens: Fish, Citrus. Serve with Fork and Chopsticks. Lobster Mac & Cheese
2.25oz tail meat and 2.25oz claw meat, shallot white wine cream reduction, orecchiette pasta, chives, and a 3 cheese blend (gruyere. Cheddar, mozzarella) finished with a parmesan panko crust. Allergens: Dairy, Egg, Shellfish, Gluten. Serve with Side Dish and Spoon.
Charred Octopus
Spanish Octopus is slow cooked in a court bouillon of onion, garlic, bay leaf, smoked paprika, lemon, chili flakes, salt, sherry vinegar, and white wine. It is then charred and tossed with Spanish chorizo, fennel, shishito peppers, chickpeas and finished with a romesco sauce. Allergens: Pork, (Nuts, Gluten (in romesco)). Serve with Fork and Knife.
Beet & Burrata
Local Red & Golden Beets, Kula Strawberries, Cucumber, Cherry Tomato, Macnut Pesto, Champagne Vinaigrette, Watercress. Allergens: Dairy, Nuts. Serve with Fork.
