Rum
A
- distilled from molasses or raw sugarcane juice
- Old fashioned: dark, heavy with notes of sulfur and funk
- Cuban: light bodied and smooth
- Modern: medium bodied with woody spice
- French: made from sugarcane juice have dry tang and light body

Gin
A
- vodka that has been bubbles through a mix of botanicals (juniper berries, orange peel, etc) called London dry
- Genever is Dutch cross between gin and whiskey
- Plymouth is from Britain and is softer than London dry

Tequila
A
- Roasted heart of blue agave plant, juiced, fermented, distilled
- aged over 2 months is reposado
- aged over 1 year is añejo

Vodka
A
- raw alcohol distilled from grain, potatoes, sugarcane, etc. to a high proof
- filtered heavily, diluted, then bottled

Liqueur
A
- liquor that has been sweetened and flavored
- Curaçaos: flavored with orange peel-white, triple sec
- Herbal: flavored with herbs-jäger, absinthe
- Apertifs: wines+alcohol+herbs, spices, etc-Vermouth (Italian red=sweet, French white=not), Sherry, Lillet, Campari

Brandy
A
- fermented fruit juice (usually grapes)
- aged short time: VS, little longer: VSOP, a long time: XO
- Cognac and Armagnac from France
- Calvados from Normandy from apples
- kirschwasser from cherries and pits, unaged
- US “(fruit) brandy” is made from grapes but flavored with those fruits

Whiskey
A
- mash of fermented grain, distilled, then aged in oak casks without filtering
- US: made from corn (bourbon)
- Canada: blend of other whiskies from corn, rye, wheat, barley
- Scotch: single malt- unblended, blended-mixed with grain whisky
- Irish: mix of malted and unmarked barley distilled together
