Q
What are the two ways that enzyme activity can be measured?
A
1 - How fast the product is made
2 - How fast the substate is broken down

Q
What happens when the temperature gets too high in an enzyme controlled reaction?
A
The reaction will stop. The rise in temperature makes the enzyme molecules vibrate more. When the temperature gets too high, the harsh vibrations break the bonds that hold the enzyme in shape and so the active site will change shape and the enzyme and substrate no longer fit together. Therefore the enzyme is denatured
