Why are hydrophobic molecules on the inside of myoglobin, not outside?
Because it is energetically favorable for the hydrophobic molecules to avoid water.
If hydrophobic molecules were on the outside of myoglobin, they would be exposed to water. The water would be forced into a more ordered/less entropic arrangement (a clathrate, in this case), which is energetically unfavorable.
