What is the only tense to retain stem changes in the preterite?
ir- although the stem change only occurs in the third person forms and is usually abbreviated from (o, ue), as in dormir, to (ue, u), or from (i, ie) to (ie, e) as in preferir. The stem change (e, i) remains the same.

Explain the (y, i) preterite stem change
In order to deal with the triple vowels created when a er or ir stem ending in a vowel is conjugated in the preterite third person, the first “i” of the conjugated ending is changed to a y:
caer- stem: ca, ending: ió/ieron, would be: caió/caieron (too many vowels together, which naturally fit an annunciated i or y sound), becomes: cayó/cayeron
