Describe the ripasso method
- Uses grape skins from a fermenting Amarone della Valpolicella
- Shotyly before fermentation finishes, the Amarone is drained off the skins.
- the unpressed skins are added to that has FINISHED fermentation.
- The remaining yeast and sugars from the added skins continue the fermentation adding colour, tannin, and flavour.
