A
  • Uses grape skins from a fermenting Amarone della Valpolicella
  • Shotyly before fermentation finishes, the Amarone is drained off the skins.
  • the unpressed skins are added to that has FINISHED fermentation.
  • The remaining yeast and sugars from the added skins continue the fermentation adding colour, tannin, and flavour.
  • flavours of stewed red cherries and plum.
