Q

Give 3 advantages of a contract caterer

A

AccountabilityContract caterers hold the risk and responsibility for achieving success. The caterer is accountable for all catering costs, which can be refunded if the client is not fully satisfied with the job.

Client Peace of MindContract caterers focus on the catering so that clients can focus on their business or event. The caterer employs and manages a team of staff suitable to the type of event being held or job undertaken.

They are the expertsCaterers can spot and react faster to trends than a client can as this is their field of work. Because of this the caterer will have trusted suppliers they may use often, e.g., green grocers and have methods to pay them. This means the client only has one total invoice to payfor the catering service.

ConnectionsCaterers have the ability to recruit the right people from their existing pool and extensive network. Caterers will have contacts on record of skilled chefs, silver service waiters, wedding cake designers that they can call upon for the event they have been hired for.

Legislative ComplianceCaterers must work within Food Safety Legislation and follow HACCP protocols. Failure to do so could result in the caterer being fined or sued which would lead to a very poor reputation and possibly bankruptcy.

They are responsible for supplying Health and Safety and Food Safety training for every team member. This gives clients huge peace of mind.
EnvironmentIf the right contract caterer is selected their sustainability achievements can enhance the client’s business and reputation. How a caterer manages food waste may be very important to green companies or environmentally conscious clients.

Q

Give 3 disadvantages of a contract caterer

A

CostSince catering requires payment for food, preparation, transportation and service, the costs can be quite high. For example, the average cost of wedding catering in 2017 was £3,959. This does not include the cake or the bar, which can increase the expenses significantly.

Stranger DangerAdditionally, a catered event means strangers will be milling aroundthe venue and interacting with guests.

Lack of VarietyThere are several different types of catering, from plated dinners to buffets and food stations. The type of catering directly influences the variety offered; plated dinners are typically more limited because guests must choose between two or three options in advance of the event. Buffets and foot stations eliminate the variety issue, but it is more difficult to plan quantities since the organisers do not know which foods the guests will prefer.
