Which formula represents hydroxyl, and why can it not be the other?
O-H or H-O
O-H represents a hydroxyl molecule. It must be this way, since the leading element (oxygen) must be able to bond to both the partner (hydrogen) and the molecule it is attaching to. This must be oxygen in this case, since hydrogen is only capable of forming one bond, while oxygen can form two.
