Villa calcinaia is home to the counts capponi family since 1524. Organic farmed, hand picked from San piero al pinot, 6 hours of skin contact, fermented in steel tanks for 8 days, max temp 68F

Bright and refreshing, medium bodied, dry with good acidity. Blood orange and grapefruit, herbs, citrus, long tingly finish.

Pairing: ham, fish, poultry, vegetarian

Pairing: roasted vegetables, lamb, risotto, fish

Friend of Kathy’s. Not actually very tasty. Do not recommend.

Pairing: charcuterie, cacio e pepe, bisteca

Juicy, fresh, blown tannin, low acid, balanced.

Nose- citrus flowers and fruit
Palate- yellow stone fruit and nuts, lemon, high acidity, toast, minerality

Pairing: cacio e pepe

Food friendly, approachable chardonnay

Traditional wine, easy to drink, blend of dolcetto grapes from vineyards in the einaudi estates which surround cogliano. Fermented in steel and concrete. 8 months maturation in steel, 2 months in glass. Dolcetto- "little sweet one"- ironic because it's not sweet

Bright and juicy, cherry, BlackBerry, floral, almond, dense tannin

Pairing: pasta, risotto, vegetables

Good substitution for malbec and pinot noir

The piceni people spread the myth of the mother goddess tied to fertility of the soil and vines. Short skin contact, stainless steel fermentation, long refining on fine lees.

Nose is yellow fruit and sage. Minerality, acidic, lemon, peach.

Good substitution for sauv blanc.

Pecorino- “of sheep” the sheep loved to snack on the pecorino graps
