What is an Apera?
Apera is an Australian local term for Sherry and Port style wines used since 2010 since the terms are regulated.

Australian fino sherry styled wine that has experienced traditional solera aging for 5-8 years. Has been fortified with “base spirit” to 15%

A well respected modern producer of Marco de Jerez. Established 2002, Father was a professor of enology at the University of Cariz and former wine maker of domecq believing in Jerez for more than just bulk sherry, planting Syrah, Merlot and Petit Verdot before championing Tintilla de Rota (Graciano). Still make bad bitch sherry.
What does Seleccion de Anadas” mean?
Selection of vintages - a term used in sherry production for a NV blend that has a selected blending to represent a specific time period

Fino Sherry with additional time under flor from Marco de Jerez
Caberrubia - NV Blend from his prized La Barajuela single vintage sherrys, named after the birds the returned to the vineyard after becoming organic. All natural alcohol, saline, balsamic, chalky, savoury depth. Each iteration is a selected blend of several vintages to add a unique identity to the wine.

ORGANIC Both winemakers in the King Valley and Importers of great French wines. All wines are Organic, WInemaker Marc, NZ born in Australia and worked harvests through France (inc. Rousseau, Romanee Conti and Chateau Angelus). Love for the wines of Jura and more unknown varieties.
Terrason Cremant 2019
King Valley, Methode Traditional, Aligote and Gamay from volcanic soils, 36 months on lees, no dosage, slightly lighter pressure than Champagne for Cremant style, base wine fermented in old oak.
2019 - Warmer vintage with heightened ripeness
A. Bartel Cuvee Brut NV
Almost Blanc de Noir Champagne from the Cote des Bar (most southern region of champagne) dominated by Chablis Kimerigian limestone and clay, the clay gives additional mouthfeel and texture to the wines.
Partial malo and minimum 2 years on lees in bottle.
Red fruits, lemon and peach, brioche, bread and biscuit.
Producer Konpira Maru
Originally an idea from 2 guys at the pub. Being upset with the extreme cost of interesting wines they set out to make cool wines that you could open mid week. Working with small growers in Queensland and Victoria to produce tiny wines. Established 2014.

90% Semillon and 10% Winter Cole Pear Cider - brewed pineapple, lemon and green orchard fruits. Light carbonation and fresh acid. Crisp and refreshing.

Small producer from the Adelaide hills that also work with grapes from smaller producers in Langehorn Creek and Clare Valley, Established 2008. Fun on the outside, serious in the bottle. Pushing biodiversity projects since 2020

Clare Valley, Classic crisp, mineral and acid powered dry Australian Riesling with fresh lime, meyer lemon, white flowers and honeycomb.
2021 - cool and dry, very happy vintage
Producer Disznoko
Tokaij Named after the vineyard of the same name meaning wild boar stone, first recorded in 1413. Recently purchased in 1992 to produce exceptional sweet and dry wines of Tokaij
Disznoko Furmint 2020
Tokaij, Hungary, 100% Furmint, Stainless steel fermentation, half malo, 4 months on fine lees, Crisp apples and pears, minerality, texture.
2020 - Slightly warmer season, required selective picking to achieve desired acid.
Region: Hilltops
Located in South western NSW this is a new emerging wine region built on red granite clay impregnated with basalt. Good free draining soils. While the region built its reputation on Cab and Shiraz it has developed into Italian Varietals specifically Glera, Grigio, Nebbiolo and Sangiovese. Cool continental climate with a long warm autumn.

Small production championing NSW wines from Canberra, Hilltops and Tumbarumba. Small negociant business.
Mada Pinot Gris 2022
Lemon guava, spiced pears, madarin peel, moderate pressings for added texture, 65% steel, 20% Whole berry ferment, 15% old oak
2022 - extremely difficult season, massive losses to disease and weather. Wines appear to be looking good but reflect the cooler year`
Grape variety: Catarratto
A white wine varietal from Sicily. Largely used in Madera and vermouth it is a high yielding grape variety that is often produced with little to know distinctive character and diminished acid. With careful vinification the grape can produce good wines with juicy texture and crisp lemon flavours.
Despite almost exclusive plantings on Sicily the grape is one of Italy’s most planted whites. Makes up 60% of Sicily’s grapes
Producer: Vicoletto
Vicoletto is a traditional producer of western Sicilian wines. Certified organic producers with perfumed and fresh wines. Catarratto, Nero d’Avola and Zibbibo for dessert. Known for picking their grapes earlier than their neighbours for their chosen crisp refreshing style

Classic crisp Catarratto from western Sicily. Ripe pineapples and tropical fruits supported by luscious texture. Unfiltered, low sulphite and organic.
2021 - small harvest but great quality
Grape variety: Inzolia
Traditional Sicilian and Tuscan white grape original used in Marsala production. Has a tendency to loose acid but modern wine making techniques have allowed for character driven single varietal wines.
Moderate aromas, citrus, nutty, herbaceous. Classical south italy white.
Region: Murry Darling
The murry darling is the second largest production in Australia, producing one quarter of all wine and 1/3 of all Chardonnay. Well know for bulk Chardonnay, Shiraz and Cabernet Sauvignon.
Hot and dry continental climate with very low rainfall and humidity. Low disease pressure.
Producer: Chalmers
One of the few quality minded producers in the murry darlin area. Also work as a nursery and sell vines and promote alternative varietals and plantings.

Murry Darling wine, unfined, unfiltered, vegan, 8 months on lees, wild ferment. Using a traditional southern Italian variety as a naturally drought resistant dry farming variety to highlight the strengths of the murry darling
Stonefruit, preserved lemon, saltbush and fennel seed.

Minimal intervention, 500L puncheons, lees stirred. Big juicy southern burgundy style
2021 - great year in the Yarra especially for Chardonnay
Region: Grampian
Located in western Victoria with Over 150 years of wine making history. The region is a cooler Mediterranean climate that specialises in dark peppery Shiraz, Cabernet, Riesling and sparklings. Some of the worlds oldest vines live here

A small winery based out of Melbourne that uses grapes from all over Victoria but champions the use of Grampian. Old vine Shiraz and white Rhone varieties are their bread and butter
