Food poisoning
An illness that can occur after eating contaminated food

This occurs when something that gets into food that shouldn’t be there e.g. bacteria

Bacteria multiply slowly in the fridge, 1 to 4°

What does dormant mean
Dormant means inactive. The bacteria are alive, but not actively growing or multiplying
What should be kept in the fridge
High risk foods such as dairy products and meat should be kept in the fridge
What should be kept in the freezer
Foods like leftovers and frozen food should be kept in the freezer
What should be kept in a cupboard
Foods like biscuits, flour, cereal and oil
Why is a use by date needed
Some foods such as meat and dairy foods are considered high risk foods because bacteria will grow on them easily. They are moist and usually contain protein, vitamins and minerals

Chicken, sandwiches, fish, cream
