A

Any given bunch of grapes will have a wide range of ripeness in the berries. Several passes are needed.

Chenin Blanc is awesome… why?

A

Depending on ripeness at harvest, from steely and smokey in character to Noble Rot lusciously sweet.

It can be aged for decades, dry or sweet, thanks to acidity and being non-aromatic.

Old dry Chenin develops honey, toast and hay notes.
