What is it good for?

Chenin Blanc - is odd. Why?
Any given bunch of grapes will have a wide range of ripeness in the berries. Several passes are needed.
Chenin Blanc is awesome… why?
Depending on ripeness at harvest, from steely and smokey in character to Noble Rot lusciously sweet.
It can be aged for decades, dry or sweet, thanks to acidity and being non-aromatic.
Old dry Chenin develops honey, toast and hay notes.
Vouvray.

- Sweet, dry or full spectrum?
- Both.

Describe a dry Vouvray
Cool climate and clay soils deliver:
Light to medium body
Fresh, fruity, floral
Rarely fermented or matured in oak
Saumur and Anjou are similar in climate and soil.
What basic style of white wines are each best known for?
Saumur, for traditional method sparkling whites from Chenin Blanc
Anjou, for dry wines, often oak matured.
Savennières white wine. Discuss
- Warmer, drier climate yields medium to full bodied wine. Less floral
- Also full-bodied Chenin-Blanc, late harvested but fermented to dryness.
- Air circulation impedes noble rot.
- Best wines will keep for a g e s.
