Ingredients: parmesan, milk, butter, and chicken stock simmered until thick
Accompaniment 1: Smoked tomato sauce-garlic, onion, smoked Roma tomatoes pureed and strained

Description: five ounces of Kennebec potatoes fried in vegetable oil and seasoned to order
Accompaniment 1: Roasted garlic aioli-house made mayo with roasted garlic puree
Accompaniment 2: Stirr ketchup-charred Fresno chile, molasses, brown sugar, and Worchestershire

Description: six ounces of smoked bacon belly (2 three ounce pieces) grilled to order
Accompaniment 1: Maple bourbon brown sugar glaze-maple syrup, bourbon, and browns sugar melted (DUH)
