What is pot still?

A

alcohol put in closed vessel and heated
- vapors travel through coil where they turn back to liquid and collected separately
- spirit is impure
- distiller has to discard “heads” and “Tails” so top and bottom parts of still to condense
- Head= toxic alcohols Tails=unwanted congeners
whats left is concentrated and flavorful alcohol

What is continuous still?

A

Difference from Pot still is:
-uses Columns- analyzer and rectifiers
-uses steam instead of direct heat
- end still is more pure and less congeners/ impurities
Flavor is sacrificed for purity. Vodka is mostly made like this

Strong Digestifs: Fernet, averna

Italians focus on light and fresh flavor
