Essential oils
Concentrated extracts of the aroma compounds found in plants
These compounds are usually volatile and insoluble in water
Can be found in almost any part of the plant
Terpenes
Compounds based on isoprene (2-methylbuta- 1,3-dine) C5H8
Family of compounds which are commonly found in essential oils
All contain isoprene units joined together
(C5H8)n n= number of terpene units joined together

Calculated by adding up the number of carbon atoms in the terpene and dividing it by 5
Oxidation of terpenes
