Botulism - onset, duration, symptoms, cause (4)
Onset of 12 to 36 hours
Duration of 2 hours to 14 days
Looks like a stroke as it causes muscle weakness in the face and eyes; can lead to difficulty speaking, chewing and swallowing
From food that are cut off from oxygen, like baked potatoes in foil and canned foods
Bacillus Cereus - onset, duration, where it’s found, why does it occur, symptoms (5)
Onset of 1-6 hours
Lasts less than one day
Found in soil, raw dried processed foods (noodles, rice, cereal) GRAINS
Illness occurs due to the survival of bacterial endospores - improperly cooked
Causes severe nausea, vomiting and diarrhea
Listeria Monocytogenes - onset, death rate, where it’s found, symptoms (4)
7 days incubation then onset
Causes 43% of food poisoning deaths as it causes dehydration
Natural occurring- Found in soil, stream water, sewage, plants and food (prevention - wash food and hands)
Symptoms: fever, muscle aches, nausea vomiting and diarrhea (gastrointestinal symptoms)
Campylobacter - onset, duration, how it spreads, symptoms (4)
Onset of 3-5 days
Lasts for 2-5 days, but can last as long as 10 days in more serious cases
Can be spread through contaminated food and poor hand washing (bacteria found in feces)
Symptoms include bloody diarrhea, peritonitis, cramps, fever and pain
Staphylococcus - onset, duration, cause, where it resides, symptoms (4)
Starts within 30 mins to 8 hours
Lasts about 1 day
Not caused by bacteria themselves but rather from the toxins they release into foods that are left out at room temp
toxins are resistant to heating and reside on surfaces/contact points and in the sinus cavities and eyes of the infected
Severe nausea, vomiting and diarrhea
Salmonella - onset, duration, treatment, source, symptoms (5)
12-72 hour onset
1-2 days
Typically goes away without treatment
Found on kitchen surfaces and can be in water, soil, animal feces, raw meats, and eggs (CHICKEN)
Affects the intestines - vomiting, fever, other symptoms that usually resolve without medical treatment
E. Coli - onset, duration, symptoms, source, how it spreads (5)
Onset of 3 to 4 days, but can be 10 days later
Duration of 5 to 10 days
Bad cramps, vomiting, diarrhea (sometimes with blood in it)
Cows! Undercooked ground beef, vegetables grown in cow manure or washed in contaminated water, unpasteurized fruit juice
Can be passed person to person but more often linked to food containing the bacteria
Trichinosis - onset, duration, symptoms, cause (4)
Begins 1 to 2 days after ingestion
2 to 8 weeks duration
Muscle pain (parasites persist in muscle tissues for the most part), fever and weakness, swelling around the eyes
Undercooked or raw pork, wild animals (deer, bear - eating raw meats)
Vibrio V and P - onset, death rate, cause, symptoms (4)
38 hour onset
50% of cases result in mortality
From seafood, raw and undercooked oysters specifically; passed through the fecal-oral route
Causes inflammation of the gastrointestinal tract (involving both stomach and small intestine) resulting in acute diarrhea
Giardia Duodenalis - onset, duration, cause, symptoms, treatment (5)
Onset of 7-14 days
Duration of 2-4 weeks
From contaminated water or food; the oral-fecal route, person to person (food handler)
Causes EXCESSIVE GAS, diarrhea, bloating, nausea, diminished interest in food, possible vomiting which when present is violent
Treatment- drink water
Clostridium Perfringens - onset, duration, symptoms, cause (5)
8-22 hour onset
Usually only lasts 24 hours but may persist for 1-2 weeks
Abdominal cramping, diarrhea, vomiting, fever
Persist in soil, areas subject to human or animal fecal pollution
Disease is heat labile (dies at 74C)
