What is ethanol?

How is ethanol produced?
A
- produced as a product of fermentation
- yeast converts sugar (glucose) into ethanol
- yeast applied to this sugary mixture
- type of sugar determines beverage
- ex: wine made from grapes
- yeast converts sugar (glucose) into ethanol
- fermentation is limited to producing abt 12% ethanol
- eventually yeast will begin to drop out solution & stop doing its job
- distillation produces higher ethanol concentrations (distilled spirits)
- ethanol concentration measured in “proof”
- distillation is the process of removing water from the beverage
- ex: boiling it. vapors from water are ethanol which gets separated
- ex of distilled spirits: rum, gin, bourbon whiskey

Blood Alcohol Content (BAC)
A
- measured by grams of ethanol in 1mL of blood
- 0.001 grams of Ethanol in 1 mL blood would equal 0.10% BAC
- 0.08BAC = legally intoxicated level in CA

- 1 “standard drink” per 50 lbs. of body weight
- 1 drink = 0.6oz of pure ethanol
- 0.6oz = 1.5oz of distilled spirits
- 0.6oz = 5oz of wine
- 0.6oz = 12oz of beer
